Sharpening stones of various grain sizes will help you restore the right angle and allow you to get your knife as sharp as a razor. The honing rod will then help to keep that edge performing for longer.

 

SHARPENING TIPS

 

WHETSTONE

Before using a Whetstone, it must be completely submerged
in water for 10 to 15 minutes. Make sure that the whetstone is wet at all times during sharpening, if the stone begins to dry out then apply a splash of water onto the surface. Firstly, sharpen one side of the knife until the burr appears by applying pressure onto the blade as its drawn towards you, then proceed with sharpening another side. Extreme care should be taken to ensure that the original factory beveled angle of 15-17 degrees is retained. Repeat the procedure using a fine whetstone, if necessary.

 

 

 

CERAMIC HONING ROD

A Ceramic Honing Rod is a knife sharpener made of hard steel with a ceramic coating. Honing rods are designed to keep your knives sharper for longer by re-aligning microscopic burs along the blade. It is worth noting however that they cannot re-sharpen a totally blunt blade alone...more abrasive sharpening before honing would be required to do this.

When using the Ceramic Honing Rod, follow these simple steps for optimal results:

  1. Grip the Handle: Hold the honing rod firmly by its handle with one hand, ensuring a stable and comfortable grip.
  2. Angle the Knife: Position the knife blade against the honing rod at a 15-20 degree angle. Maintaining the correct angle is vital for effective sharpening.
  3. Apply Gentle Pressure: Using light pressure, slide the cutting edge of the knife along the honing rod's surface. Start from the knife's handle and smoothly shift towards the blade's point in a controlled manner.
  4. Repeat Both Sides: Hone each side of the knife alternately to maintain a balanced edge.

 

 

 

 

 

KNIFE ANGLE HOLDER

Utilising the Samura Knife Angle Holder with a whetstone is a simple and secure technique to restore the sharpness of dull kitchen knives, keeping their high-performance blade edges in optimal condition. The angle holder is designed to take the guess work out of sharpening at a suitable angle.

Step-by-step guide on how to use Knife Angle Holder:

  1. Place the sharpening angle holder on the back (spine) of the knife.
  2. Begin sharpening the knife using a whetstone, ensuring you sharpen until you notice an even burr forming on the opposite side that's being sharpened.
  3. For double-bevel knives, flip the knife over and repeat step 1.
  4. If the length of the knife blade extends beyond the holder, slide the holder to cover the remaining section of the blade, and then repeat steps 1 and 2 accordingly.

 

 

 

 

 

GENERAL CARE & INSTRUCTIONS

Before First-Time Use:

Rinse the knives with hot water and dry them thoroughly.

Avoid using the knives on glass cutting boards, as they can dull steel blades. We recommend using Wooden or TPU boards to keep your knives sharper and damage free for longer.

Cutting Guidelines:

Exercise caution when cutting food with bones; consider using a cleaver for such tasks.

For cutting frozen food products, opt for a special double-sided saw knife with a serrated blade.

Proper Handling:

Avoid leaving knives in the sink for extended periods, as it can damage both the handle and the knife edge.

Clean knives manually with non-abrasive materials and dry them promptly; dishwasher use is not recommended.

Storage:

Store knives in a knife holder or brush block, ensuring the blades do not come into contact with metal items.

Blade Sharpness:

Avoid checking blade sharpness with bare hands. Use a piece of paper instead. As a general rule, if your knife cannot cut cleanly through a piece of paper without ripping and tearing it, then you should consider sharpening the blade before further use. Dull blades require excessive force to move through ingredients, increasing the likelihood of an accident or injury.
